CHATHAM — The wood-frame building under construction on Route 66/Hudson Avenue near the intersection with Route 203/Church Street is a new bakery and café being built by the owner of the bakery in the village, Our Daily Bread. Last week the crew from A and D Construction connected the shell of the new bakery to the existing house next door, where the café will be.

Zvi Cohen is the owner of Our Daily Bread on the roundabout at the intersection of Main and Kinderhook Streets Village. He also owns Destino, the restaurant at the corner of Routes 203 and 66 adjacent to the new bakery. Before Mr. Cohen bought the corner building and opened Destino, that building was a bakery and restaurant.

Mr. Cohen described the new building as “a bakers dream” in a recent phone interview, although he was reluctant to provide details about the project. He said he has not yet announced an opening date.

Plans for the new building submitted to the village Planning Board show the new building has 3,874 square feet and  connects to the previously existing 1,249-square-foot structure. The Planning Board approved the project last February.

Plywood sheathing covered much of the new bakery this week, but Mr. Cohen says there will be 46 windows in all. He also said the two new ovens for the bakery will soon be delivered. They are coming from France.

He stressed that Our Daily Bread will still keep its shop at the north end of Main Street. He also said that he used local companies to work on the project where possible. And the crews have been working through the cold, snowy weather.
