CHATHAM–Marian Day has a backyard operation to make syrup for her family use. She has 3 taps in the sugar maples of her family property. She’s collected about 30 gallons of sap. With a typical ratio of 40 gallons of sap to one gallon of finished syrup, she will make about three quarts on her little wood stove.

The bottle on the left is some of the finished maple syrup from the weekend. The bottle on the right is from last year. Their flavors are different, but they are both very sweet. © 2025.
Ms. Day uses traditional sap gathering buckets. Larger operations such as the one at the Farm at Miller’s Crossing string tapped trees together with tubes that use gravity or suction pressure to collect the sap. © 2025.
